Photo credit Sigvard Hansen, Public domain. Ask anyone in Vendsyssel what Store Vildmose is known for and the answer will very likely be potatoes. It is an odd reputation for a bog. Twenty kilometres north-west of Aalborg lies one of the largest raised bogs left in Denmark — a place that at its greatest extent covered something like seventy square kilometres of peat moss, waterlogged and acidic and slow, the kind of ground that keeps whatever falls into it. Today a good share of that ground is black, ruler-straight farmland, and the crop it is famous for has a skin thin enough to rub away with a thumb. Both landscapes are here at once. The seam between them is a ditch.
